What we do ~ Sunset Catering

Outdoor weddings are always so beautiful but with our Western Washington weather the door of outdoor wedding possibilities is quite limited. Sun streaming through the large windows in Spring creates a beautiful ambiance as well. Sunset Catering and their staff works hard to make the dinner buffets look very inviting.

A few moments before the dinner guests come to the buffet...
When the weather is perfect and the venue is so beautiful...
We love to make your event very special and tasty!

Summertime Catering

We're excited to cater your summer company picnics, your Graduation parties and your summer weddings! It'll be wonderful to be able to spend more time outdoors.

Aren't these summer beach cupcakes adorable? We did a small baking class and whipped up these fun summertime treats.

The raspberry lemonade punch is a popular July wedding choice. It's fresh and sparkling flavors match the beautiful days of summer.

Desserts~The more the better!

This was one of the first weddings that I catered on my own. Well not really on my own. I had several wonderful helpers of course! This was the dessert selection. We have since learned more about display and presentation but the dessert minis were enjoyed just the same.
Above is pictured the Mini Almond Tarts, Mini Eclairs, Mini Vanilla Pastry Slices, Mocha Tartlets, Naniamo Bars, Lemon Mousse Mini Butterfly Cakes and the Strawberry Meringue Kisses.
This dessert buffet presentation is a more recent one. We are learning all the time! :)

Freshness!

How beautiful fresh fruit is in late summer! We love to put together fruit platters with all the colorful fruits of summer.
I just came across this picture of the Mocha Filled Brandy Snaps. Sometimes we roll them up and fill them with mocha but we also use a wonderful fresh lime cream as well. They are always a hit on dessert platters!
Smoked Salmon filled Phyllo Cups with Fresh Dill were served at a grand opening evening a while back and they were just the right size! One bite of an explosion of flavor!
Sunset Catering works hard to give their clients all the flavor and freshness they crave!

Selecting Appetizers

When I help a bride, Mom of the bride, or a party hostess pick out appetizers I like to suggest they select from each category. There are dips and spreads, tortilla roll ups, caprese selections, smoked salmon pastries and several other hot and cold options. Ask for a detailed list from Sunset Catering.
Call or email Sunset Catering for a consultation and to book your very special event.

More Desserts

For my daughter's wedding last spring, a friend of mine made a beautiful cake to use as a centerpiece at the dessert buffet. The layered "Naked" Carrot cake was a favorite of both the bride and the groom and it turned out amazing with all the wonderful layers. We also did a variety of miniatures including the Triple Chocolate Brownies, (in the image below) as well as several tarts and mini cakes. The biggest dessert hit, though, were the Strawberry Meringue Kisses! (also pictured below)
I love color! Whether it is color from the food or from the floral, it's what makes beauty!
Ask for a dessert list when you consult Sunset Catering. We will be happy to give you a selection of beautiful and delicious desserts!

Selecting the Salads

Sunset Catering's menu consists of an abundance of fresh salads. While the hot dishes are essential to a dinner, salads also have an important place at the buffet and on your guests plates. Most parties select at least two salads. The Greek Fresh Vegetable and Pasta Salad and the Caesar Salad with Fresh Parmesan Curls are pictured above. Both of them are made with the freshest ingredients possible. Let Sunset Catering know when they can schedule your special event.

Miniatures on your Dessert Buffet

Lime Margarita Mousse miniatures... kind of exotic, extremely tangy and very quick to disappear. Such a wonderful option at a dessert buffet!

Double Chocolate Mousse miniatures...very creamy, silky smooth and all the chocolate you crave! A must on your dessert buffet!
It is always hard to choose at a dessert buffet but when they're mini's it's ok to take more than one! Sunset Catering has a delightful selection of dessert minis.

Catering your Special Events

This graduation banquet in a rustic barn, was an especially exciting event to cater since it was my daughter that was graduating. The kids all dressed up so beautifully and it fun to see them enjoy the evening, each other and the dinner and dessert,of course! We served a variety of salads, the Wild Rice Pilaf, her favorite Creamy Roasted Tomato Chicken and plenty of other favorites all around!
The dessert buffet consisted of a selection of mini tarts and fresh fruit. We had a beautiful area to decorate with lanterns, shells and many aqua colored accents. It was interesting that unknowingly the seniors were wearing colors that matched the decor! It was a splendid evening and everyone took plenty of photos in their niceties. As I always say, Sunset Catering loves to make your event very special!
A sweet final touch: The Naniamo Bars (pictured above) that we make so often for dessert buffets, showers, appetizer evenings and for afternoon teas.
May all your sweet dreams come true with Sunset Catering!

Fresh! The Kiwi Sunrise Beverage

Happy New Year!
There are ways to get your Vitamin C in the winter! Fresh fruit from sunny and warm parts of the world get flown to us on a regular basis! So wonderful! This Kiwi Sunrise beverage lets us take advantage of plenty of them. You can cut down the amount of sugar depending on the sweetness of the fruit you use. This recipe serves the need of four vitamin hungry people.

 Kiwi Sunrise
1 cup fresh orange juice
1 ½ cups fresh or frozen strawberries
¼ cup sugar
15 ice cubes
4 kiwis, peeled and quartered
Method:
·       Combine all ingredients in a blender except the kiwis.
·       Whirl until very smooth.

·       Add kiwis and blend very briefly. The seeds should not be broken up. Serve immediately.
Going with the Sunset Catering theme of freshness, I thought this recipe was a perfect winter drink to promote.
I hope you are enjoying this spattering of recipes in the midst of the catering posts!

Crepes for New Years Breakfast

Welcome the New Year with a delightful breakfast of Crêpes!
Crêpes were a special part of an event I catered a couple weeks ago. I used oat* flour for some of them for a gluten free option. Both varieties were enjoyed immensely
We find that Crêpes are good right out of the frying pan! Crepes are also good stuffed with fruit or topped with sugar and cinnamon.  And, even just as yummy, with a savory spinach filling! They are healthier than pancakes because of their generous egg content and the omission of oils.

The Recipe for Crêpes:
3 large eggs
1 cup milk
½ cup water
2 tbsp. melted butter
1 cups flour (regular flour or oat* flour)
1 tbsp. sugar
¼ tsp salt

Method:
  • Beat together the eggs and milk with a wire whisk.
  •  Whisk in the melted butter.
  • Stir the flour with the sugar and salt in a small bowl.
  • Add the flour mixture to the egg mixture using a wire whisk.
  • Cover and chill the batter for at least 30 minutes.
  •  Pour the prepared batter into a round heated and slightly greased frying pan. Tilt the pan to make a perfect circle.
  •  Flip the crêpe after about 2 minutes. Cook 1 minute more on the other side.
  •  Keep crêpes warm until serving. Place wax paper between the crêpes to keep them from sticking together.
*Oat flour is gluten free if it is grown in a wheat free area and ground on gluten free equipment.
